Ingredients

  • 4 oranges.
  • 400 gr chocolate suitable for coeliacs.
  • 500 ml of liquid cream.
  • 500 ml of milk.
  • 30 gr of sugar.
  • 80 gr of refined corn flour.
  • Mint leaves.
  • 6 egg whites.
  • 4 tablespoons of icing sugar.
  • Zest of 2 oranges.

Preparation

  • We start by mixing the cream and milk at a temperature no higher than 100 ° C.
  • Next, in another casserole add the chocolate gradually and stir until it dissolves.
  • On the other hand, in a bowl, place the sugar and cornmeal and stir until they are completely combined. Afterwards, pour in the initial mixture of milk and cream.
  • Once everything is well diluted, pour the mixture into the chocolate pan and simmer (for 3-5 minutes) until you get a thick texture.
  • Peel the oranges and place 3 wedges in each container where you will serve the sweet. Add the creamy chocolate and let it temper.
  • Finally, beat the egg whites and then add the icing sugar and orange zest until the mixture is stiff. This meringue will be used to decorate the containers (do it with a pastry bag to decorate).

  • Do the same with the bananas: peel them, chop them, caramelize them and mash them well. Then add them to the applesauce and add the vanilla.
  • Separate the whites from the egg yolks. The yolks add them to the puree and the whites beat them with the tip of the snow. Then, join the two mixtures.
  • Place the composition in individual containers greased with butter. Then you must put them in the oven preheated to 180º, and let it act for 20-25 minutes.
